Hat Trick Brewing, located in Spokane’s Historic West Central Neighborhood is focused on bringing the community together with our beer, food, and monthly events. We take great pleasure in connecting our patrons with unique, high-quality beers with a focus on experimentation and pushing the boundaries while pairing them with food that fuses culinary influences from all over the world. With over twenty years of combined experience, the brewery was founded by Remington and Nick, who brought their passion and experience with beer and food to the forefront of Spokane’s brewing scene, and they look forward to serving you for years to come.
So please, come join us for beer and food in what has been described as the “neighborhood's largest living room.” We would love to share our food, beer, and community with you!
Nicholas
Nick is a co-owner and operator of Hat Trick Brewing, responsible for the day-to-day operations. You will often find him behind the bar, serving our distinctive and delectable beverages alongside our delicious food. Nick began his journey in the brewing industry in 2013 in San Diego, working for Stone Brewing and Lost Abbey Brewing Co. He moved to Spokane in 2019, where he continued to work in breweries before opening up Hat Trick Brewing.
Outside of work, Nick spends time with his wife and kids and has been relearning how to skateboard- often in outlandish party shirts- and looks forward to sharing that with his daughter. It has been a very humbling and fun experience. He brings the same passion and perseverance to the brewery that he does to his sports teams, as he is an Arsenal and San Diego Padres fan, so you know he is here for the long haul.
Remington is a co-owner and operator of Hat Trick Brewing, where he specializes in crafting the delicious craft brews that we all enjoy. His passion for beer took hold while he was working as an assistant chef, and he quickly made a transition into brewing, where he spent the past decade perfecting his craft throughout the Northwest. Using his previous hands-on experience with food and beer to create unique and incredible flavors.
When he is not brewing or testing beers at Hat Trick, he is spending time with his growing family and playing frisbee golf. If you see him working around the brewery, don’t think twice about calling him by his nickname “Remi” and picking his brain about the amazing beers he makes for all of us.
